Ingredients
  

  • 8 Pasta (e.g., Calamarata) Preferably al dente
  • 16 Baby Bella Mushrooms Sliced
  • 1.5 tbsp ellow or White Miso Paste Provides umami flavor
  • 2 tbsp Olive Oil For sautéing
  • 4 cloves Garlic Minced
  • ¾ cup Coconut Milk Full-fat, unsweetened
  • 2 tsp Italian Seasoning For flavoring
  • As needed Fresh Herbs For garnish

Instructions
 

  • Sear the Mushrooms:
    Heat a non-stick skillet over medium-high heat and add 1 tablespoon of olive oil.
    Add sliced mushrooms and cook in batches for 5-8 minutes until golden brown. Set aside.
  • Sauté Garlic:
    In the same skillet, add the remaining olive oil and minced garlic.
    Sauté for 2-3 minutes over medium heat until fragrant.
  • Cook the Pasta:
    Boil 8 oz of pasta in salted water for 8-10 minutes or until al dente. Reserve ½ cup of pasta water, then drain.
  • Prepare the Sauce:
    In the skillet, mix 1.5 tablespoons of miso paste, ¾ cup of coconut milk, and the reserved pasta water.
    Stir until the sauce is creamy and well combined.
  • Combine Pasta and Sauce:
    Add cooked pasta to the skillet and toss to coat in the sauce.
    Add the sautéed mushrooms back in and mix well.
  • Season and Garnish:
    Stir in 2 teaspoons of Italian seasoning and adjust salt to taste.
    Garnish with fresh herbs and serve immediately.
